M&C Analyzer was designed by American and Russian scientists for controlling meat freshness during storage, transportation and sale by means of express-analysis of intensities of specific luminescent lines of bacterial products accumulated in meat foodstuff in the course of storage. Microorganisms responsible for food contamination and decay most commonly exhibit apparent proteolytic activity. Their occurrence in food products is undesirable as they reduce biological and nutritional food value and sometimes make their use in food impossible. Besides changing the organoleptic properties of the product, microorganisms stimulate accumulation of poisonous substances causing foodborne diseases.
